To achieve the final product, we don't expedite the process with soda, as is commonly done. Instead, we allow the product to be salted for nearly 8 months. Once the product is ready, it's made available in two versions. The first is a brine, which consists of water and salt. The second, a seasoned variant, is enhanced with a mix of spices, chili pepper, and our extra virgin olive oil.
